We put some green top milk in a bowl and added a few drops of food colouring. The blob of milk stayed still until we added some detergent. we were surprised to see that the milk started swirling around.We tried the experiment with the milk that Fonterra supplies the school and the same thing happened but not as quickly. It turns out that part of the detergent molecule is attracted to fat and so it moves around quickly hunting for fat. The other part of the molecule is attracted to water so its trying to find any water in the milk. The food colouring just shows where its rushing round to. The"more fat there is in the milk the faster the detergent molecule moves.
